Why we made it
We spent eleven months in Indian kitchens.
It flakes.
A 2 mm base cannot hold heat.
No depth for a gravy.
So we cast the pan Indian cooking actually asks for.
What you get
Seven coats of groundnut oil.
A 6 mm base.
A helpful side effect.
No PTFE, no PFOA.
Gas, induction, oven.
Iron does not wear out.
The kadai, in detail
No rivets, no welds.
Living with it
Three habits, thirty seconds a day.
