The 22-katori Maharaja thali served on silver in the durbar hall, while Manganiyar musicians and a kalbeliya dancer perform from 8 PM. Ghee poured at the table, paan to finish.

Low tables, mattresses and lanterns on the haveli terrace with the old-city skyline behind you. A set feast of kachoris, dal-baati, laal maas or gatte, and ghevar.

Three hours in the courtyard kitchen with Kamla Bai: pat bajra rotis, bake baatis on the angeethi, grind lehsun chutney, and eat what you made.

Live kachori counters, silver thali service, a mithai table under marigold canopies. Anywhere in Jaipur and Amer, from 50 to 1,500 guests.

Our story
Rajwada began when Thakur Bhanwar Singh Rathore opened the ground floor of his family haveli on MI Road and served the same thali his mother made in Nagaur — dal, baati, churma, and whatever the desert gave that season. The brass thalis are the same ones. The ghee still comes from the family's cows.
His son, Chef Devi Singh Rathore, added a shikaar kitchen for the old hunting recipes of Mewar and a rooftop for the winter, but the rules have not changed: nothing is refined, nothing is rushed, and no guest leaves without a second helping.

Why Rajwada
Every dine-in thali is unlimited. The ghee comes to the table in a brass lota and the baatis keep coming.
Ker and sangri from Jaisalmer, mathania chilli from Jodhpur, bajra from Barmer, ghee from our Nagaur dairy.
The veg kitchen has never seen meat. The shikaar page is cooked upstairs with its own vessels and staff.
Order from this page and there is no 25% commission — so the thali costs less and the halwai gets paid more.
The haveli

Grew up in the haveli kitchen; trained in Udaipur's palace kitchens before taking over the shikaar recipes from his father.

Thirty-one years at the angeethi. Pats every bajra roti by hand and runs the weekend cooking class.

Makes the ghevar, malpua and moong dal halwa every morning; his family has run a Johari Bazaar sweet shop for four generations.

Keeps the reservations book, the folk-music line-up and the valet in order, and remembers every regular's spice level.
Guest stories
We came for the Hawa Mahal and stayed for the thali. Ghee poured at the table, twelve refills of dal, and the folk singers took my mother's request. The ghevar is the best in Jaipur.

Ordered dal-baati and laal maas on WhatsApp for a house party in C-Scheme. Confirmed in two minutes, arrived hot in forty, and the laal maas had the proper mathania fire.

Booked the rooftop for my parents' anniversary. Lanterns, the old city behind us, and a Jain version of the whole feast without being asked twice. Flawless.
